My fav is Tasmania.  Rented a car and drove all over the island, so much to see and do!  Will be going to Mel next year to visit my sis.  Haven't been there but I supposed it will be better than Sydney.  WA is also not too bad.

if you like scenery but still prefer staying in city but not too populated place, go SA... its beautiful
