Ah Hah! It's the darn fish sauce! I knew something was missing in there. Thanks for the recipe. very very useful.

To ensure that meats are always juicy and tender.... salt them just before you finish cooking. That's it. No secret processes, no special technique.

Salt dehydrates meat, so if you season meat with salt before you cook them, the moisture in meats would have dried up before it even hits your pot/pan.

 waving kockmeister, thanks for your recipes. your fish finger recipe sounds good. can we make the bread crumbs ourselves or should we buy ready-made ones? do you have any simple recipes for vegetables? i only know how to bake potatoes and broccoli (with olive oil, salt, pepper, garlic), but want some alternatives that go well with baked chicken, baked fish fingers (your recipe), steak... many thanks for any tips!

Best to buy the breadcrumbs. A brand like Progresso's pretty good.

Try this...

- 700gms sugar snap peas - ends removed
- 1 tablesppon of salted butter
- mint - coarsely chopped (your own preference on the amount) 2 leaves or more preferred
- salt
- ground black pepper

Blanche peas in pot of boiling salt water
Melt butter in skillet  and add peas. Sauté until peas are crisp and tender.
Toss in mint before serving.
